One Pot Italian Beans and Sausage
A while back, I reviewed the cookbook A Good Food Day: Reboot Your Health with Food That Tastes Great by Marco Canora. There were quite a few recipes in it that I enjoyed, and this was my hands-down favorite main dish. In the cookbook, it’s called “ucceletto.”
According to Canora, to cook beans ucceletto-style is to cook them “in the manner of little birds”:
It’s a reference to sage, rosemary, tomato, and garlic- the ingredients traditionally used to cook squab and quail in Italy.
The combination sounds so simple, yet it achieves an incredibly satisfying depth of flavor. I turn to this recipe on an almost weekly basis. Garnished with some fresh parmesan, it’s better than most restaurant meals!
There were quite a few recipes in Canora’s cookbook that I enjoyed, so I feel comfortable giving it a hearty recommendation. Each one was full of flavor, yet on the healthier side of the spectrum.

Tips for Making One Pot Italian Beans and Sausage
- This recipe can be made, from start to finish, in 40 minutes flat. It’s perfect for a fast weeknight dinner, but you can also use it to impress company. It tastes much more complicated than it actually is!
- I’ve noted in the recipe that you can use hot or mild Italian sausage links. It’s really up to your personal preference; I’ve used both and they both work well.
- This one pot Italian beans and sausage dish makes absolutely wonderful. You might even say that, like chili, it tastes better the second day. Try it and let me know what you think.
- Definitely garnish with some fresh parmesan or romano. Grate it right off a big hunk!
- Serve with some nice foccacia or Italian bread to soak up the amazing sauce.

Made all in one pot in just 40 minutes, this savory combination of Italian beans and sausage and tomato sauce will become your new favorite dinner.
Ingredients
- 1 1/2 pounds Italian sausage links hot or mild as you prefer
- 3 tablespoons extra virgin olive oil plus more for serving
- 4 cloves garlic sliced thin
- 28 ounces whole peeled tomatoes half the juice from the can reserved
- salt
- pepper
- 2 tablespoons finely chopped fresh sage or substitute 1 tablespoon dried
- 2 tablespoons finely chopped fresh rosemary or substitute 1 tablespoon dried
- 30 ounces canned cannellini beans drained and rinsed
- 1/4 cup water
Instructions

Preheat a large pot over medium heat. When a drop of water sizzles in the pan, add the sausages. Brown for a couple of minutes on each side. When they are brown almost all the way around, remove from the pan and set aside.

In the same pot, add the olive oil and garlic. Saute until slightly colored, then add the canned tomatoes with their juice. Add a pinch of salt and cook for 5 minutes, using a large spoon to break up the tomatoes as you stir.

Add the sage, rosemary, and a pinch of pepper and cook for 1 minute. Add the beans, stir, and bring to a low boil. Add the browned sausages back in and simmer uncovered for 20 minutes, or until sausages are cooked through.

To serve, garnish with a little olive oil and some freshly grated Parmesan cheese.

I live in Italy (in the area of Naples). This recipe sounds REALLY similar to what I’ve eaten at a couple agriturismos in the area. The only difference I can tell is that they add some delicious chewy/crunchy croutons. I’m definitely trying this recipe. Thank you!
