Buffalo Chicken Lettuce Wraps
On a scale of one to ten, Florida’s summer sun intensity goes to eleven. It’s not the time to make hot, heavy, complicated dishes that heat up the oven and, by extension, the house. It’s time to whip out something cooling.
Salads are a great option: cool, crunchy, crispy, and topped with my favorite dressings by Litehouse. Watch the video to see how easy it is to make this recipe!

This summer, I’ve created a salad recipe with a little more protein. Despite being a life-long Florida flatlander, I’m actually in training to walk up a mountain this summer. I need a healthy amount of protein to build all the necessary muscles.
I adore buffalo chicken in all its forms—see also my buffalo chicken dip—so it only makes sense to pack all that flavor into a buffalo chicken lettuce wrap, which is basically a hearty salad you can eat with your hands. Somehow, it’s more fun that way.
When you pick up all your lettuce wrap ingredients in the produce section, you’ll want to grab your choice of Litehouse Dressing: Litehouse Chunky Bleu Cheese Dressing or Litehouse Homestyle Ranch Dressing. Whichever one you like best with buffalo wings is the one you should choose. The recipe is written so you can use either (or both if you want to go completely wild)!
These fresh-tasting refrigerated dressings are high quality, delicious. and made with real ingredients like buttermilk and real blue cheese. They’re my dressing of choice for everything from crisp salads to cold veggie platters.
Since the dressing is used as a finishing touch, you can actually make the filling ahead of time, then assemble your wraps for a quick, fresh lunch or a last-minute party appetizer.
Tips for Making Buffalo Chicken Lettuce Wraps
- You can use any leftover chicken for this recipe. Chopped chicken breasts, tenderloins, or leftover rotisserie chicken works great. No chicken? Try turkey!
- For extra crisp and cold lettuce, wash the lettuce, then submerge it for one minute in ice water before drying and serving.
- Love crunch? Try filling celery pieces with the buffalo chicken mixture, then topping with Litehouse Dressing.
- You use any flexible and sturdy lettuce for these wraps, including butter, bibb, iceberg lettuce, and romaine.
Enjoy your summer (despite the heat) and be sure to look for Litehouse Chunky Bleu Cheese Dressing and Litehouse Homestyle Ranch Dressing in the refrigerated case of your produce section. You can also access a coupon when you sign up for the Litehouse newsletter.
