Roasted Pork Loin Filet with Whole Baby Bella Mushrooms

Weeknight dinners need to be simple and fast.  That’s why this recipe for roasted pork loin filet is one of my favorites.

With less than five minutes to prep, this savory dinner can be in the oven in no time at all.  That frees you up to do more important things, like catching the latest episode of your favorite TV show.

Oh, wait.  I meant to say important things like doing the dishes.

Let’s just say that I’ll let you choose which activity you’d rather do.

The other reason I like this recipe is because of what happens to the mushrooms.  I’m sure there’s a very good scientific explanation for it, but Bill Nye hasn’t returned my phone calls yet, so for now we will simply have to marvel at the mystery of it all.

Anyway, the mushrooms—when baked with their open cups facing upward—slowly fill with the rich juices of the pork and the liquids that are roasted out of the mushrooms themselves.  The result is a dozen or more edible cups filled with sumptuous jus.

(I had to use the French word, because sometimes only French will do.)

The finished dish comes out looking oh-so-rustic yet just a bit fancy.  No one will know you didn’t spend hours on it, so don’t tell them.

I picked up my pork loin filet at Walmart.  It’s a Smithfield Applewood Smoked Bacon Loin Filet, which means that it’s already marinated for me.  I didn’t have to do a single thing with it other than put it in a pan and roast it.

  • Thin slice the leftover pork for cold cut sandwiches.
  • Chop the pork and mix with BBQ sauce for BBQ sandwiches.
  • Cut pork into strips and toss with fajita seasoning for pork fajitas.
  • Dice and combine with mayonnaise, walnuts, and apple pieces for pork salad sandwiches.
  • Chop and combine with salad greens, pomegranate arils, and pecans for a lunch salad.

Ingredients

  • 3 pounds marinated pork loin filet such as Smithfield Applewood Smoked Bacon Loin Filet
  • 1 pound baby bella mushrooms
  • 1 tablespoon extra virgin olive oil
  • Sea salt
  • Black pepper

Instructions

  1. Preheat the oven to 375 F and line a 13 by 9 inch pan with parchment paper. Place the pork loin filet in the lined pan.
  2. Rinse the mushrooms thoroughly. Remove the stems from the mushrooms and discard. Toss the mushrooms with the olive oil plus a pinch of salt and pepper.
  3. Place the mushrooms in the pan with the open cup turned upwards all around the pork.
  4. Put the pan in the oven and bake for about one hour, or until the internal temperature of the pork reaches 160 F. The mushrooms will look very dark, but they will not burn.
  5. Rest the pork for 5 minutes, then slice and serve with mushrooms.
