  • 1/2 cup Gluten Free 1 to 1 Baking Flour Bob's Red Mill
  • 3/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1 cup sugar
  • 1/2 tsp sea salt
  • 1/2 cup unsweetened applesauce

  1. Preheat the oven to 350 F.  Line an 8 inch square pan with parchment paper to prevent sticking.

  2. In a small bowl, whisk together the flour and the cocoa. In a large mixing bowl, beat the eggs and the yolk.

  3. Add the vanilla, sugar, salt, and applesauce to the large mixing bowl with the beaten eggs, and whisk until well combined.  Add the flour/cocoa mixture to the large mixing bowl and whisk until well combined and slightly glossy.

  4. Bake for about 20 to 25 minutes, or until a toothpick inserted in the middle comes out with moist crumbs attached, but not runny batter.  (If the toothpick is completely clear, they're overdone.)

  5. Cool in the pan on a rack until completely cool, then cover tightly and let sit overnight.  The flavor is best the next day, although the brownies can be eaten right away if desired.
