Cucumber Raita

This cucumber raita recipe is made with whole milk yogurt, cumin, cilantro and seedless cucumbers. A perfectly cool and refreshing dip!

Ingredients

  • 1/4 tsp whole cumin seeds
  • 3/4 cup plain whole milk yogurt
  • 3/4 cup seedless cucumber peeled and chopped
  • 1 tablespoon fresh cilantro finely chopped

Instructions

  1. Toast the cumin seeds by heating in a dry pan over high heat for a minute or so, until fragrant. Grind to a fine powder in a spice grinder or mortar & pestle.
  2. Combine the yogurt, chopped cucumber, cumin powder, and chopped cilantro in a bowl. Stir until well combined. Serve immediately, or refrigerate to store.

Recipe Notes

All raita may get watery after a few hours from the cucumbers; this is normal.  Stir before serving.
