  • 1 1/2 pounds Italian sausage links hot or mild as you prefer
  • 3 tablespoons extra virgin olive oil plus more for serving
  • 4 cloves garlic sliced thin
  • 28 ounces whole peeled tomatoes half the juice from the can reserved
  • salt
  • pepper
  • 2 tablespoons finely chopped fresh sage or substitute 1 tablespoon dried
  • 2 tablespoons finely chopped fresh rosemary or substitute 1 tablespoon dried
  • 30 ounces canned cannellini beans drained and rinsed
  • 1/4 cup water

  1. Preheat a large pot over medium heat. When a drop of water sizzles in the pan, add the sausages. Brown for a couple of minutes on each side. When they are brown almost all the way around, remove from the pan and set aside.
  2. In the same pot, add the olive oil and garlic. Saute until slightly colored, then add the canned tomatoes with their juice. Add a pinch of salt and cook for 5 minutes, using a large spoon to break up the tomatoes as you stir.
  3. Add the sage, rosemary, and a pinch of pepper and cook for 1 minute. Add the beans, stir, and bring to a low boil. Add the browned sausages back in and simmer uncovered for 20 minutes, or until sausages are cooked through.
  4. To serve, garnish with a little olive oil and some freshly grated Parmesan cheese.
