Preheat the oven to 375 and set out a 1 quart baking dish and a mixing bowl. If you wish to peel the apples, peel them.
Cut the apples into 8 slices each, removing the core. Cut each slice into three pieces to make smaller apple chunks of approximately equal size. You'll need about 3 cups of apple chunks. Place the apple chunks in the 1 quart baking dish.
In a mixing bowl, whisk the sugar, oats, flours, cinnamon, and salt (if used) together. Add the butter and mix with a fork until the ingredients have formed into small clumps. Once the ingredients have clumped together, there should be no loose flour or sugar in the bowl and no visible bits of butter.
Using the back of the fork, compact the mixture firmly into the bowl until it sticks together in one large clump. Hold the clump in your hand over the the top of the apple chunks. Break off pieces of the clump and let them fall on top of the apples in chunks. It should cover the top relatively evenly.
