Ingredients
14tablespoonsunsalted butterat room temperature
3/4cupbrown sugar
1/2cupgranulated sugar
2eggs
1teaspoonvanilla extract
3/4cupall purpose flour
3/4cupwhole wheat flour or white whole wheat flour
1teaspoonbaking soda
1/4teaspooncinnamon
3cupsold-fashioned oats
1cupsemisweet chocolate chips
1cuppecan pieces
Instructions
Preheat the oven to 350 and prepare cookie sheets by lining them with parchment paper.
In a large bowl, beat together the softened butter and the sugars. Add the eggs and vanilla, then beat again.
Add the flour, baking soda, and cinnamon, and stir in. Add the chocolate chips and pecans, and stir until evenly distributed throughout the cookie dough.
Use a spoon to scoop up enough cookie dough to form a ball about 1 1/2 to 2 inches in diameter. Place the cookie dough balls evenly on the cookie sheet.
Bake for 10 to 15 minutes, until you see that the tops of the cookies are tipped with brown color. Remove from the oven and leave on the cookie sheets to cool for at least 10 minutes. Then, move the cookies to a rack to finish cooling. Once they are completely cool, store in airtight bags or containers.
Recipe Notes
You may substitute walnuts for pecans if you prefer.
