Ingredients

  • 3 pounds marinated pork loin filet such as Smithfield Applewood Smoked Bacon Loin Filet
  • 1 pound baby bella mushrooms
  • 1 tablespoon extra virgin olive oil
  • Sea salt
  • Black pepper

Instructions

  1. Preheat the oven to 375 F and line a 13 by 9 inch pan with parchment paper. Place the pork loin filet in the lined pan.
  2. Rinse the mushrooms thoroughly. Remove the stems from the mushrooms and discard. Toss the mushrooms with the olive oil plus a pinch of salt and pepper.
  3. Place the mushrooms in the pan with the open cup turned upwards all around the pork.
  4. Put the pan in the oven and bake for about one hour, or until the internal temperature of the pork reaches 160 F. The mushrooms will look very dark, but they will not burn.
  5. Rest the pork for 5 minutes, then slice and serve with mushrooms.
