Chicken Salad with Apples, Cranberries, and Pecans
There’s an long-gone theme park ride that I think of from time to time when I’m working in the kitchen. In the ride—which portrayed a fanciful trip to the future—there was a scene featuring an anthropomorphic robot in a kitchen. The robot resembled a walking kettle grill with half a dozen arms. Chicken Salad with Apples, Cranberries, and Pecans
Classic chicken salad with apples, cranberries, and pecans, in mayonnaise. Simple ingredients and easy to follow instructions. Serve on sandwiches or salad!
Ingredients
- 3/4 pound chicken cooked
- 1 apple such as Honeycrisp
- 1/4 cup mayonnaise
- 1/2 cup pecans
- 1/3 cup dried cranberries
- salt optional, to taste
Instructions

Chop the chicken and apple into small pieces. Add the pecans and dried cranberries. Add the mayonnaise and mix well.

Add the mayonnaise and mix well, until everything is evenly coated. Add a little more mayonnaise (1 tablespoon at a time) if the mixture is too dry. Taste, and add salt if needed.

Serve on green salad or sandwiches. Wrap airtight and refrigerate to store.
