Late Night Breakfast S’mores
Have you ever stayed up so late at night that you get hungry again, but you aren’t sure whether you should eat breakfast or have a late night snack? Problem solved. These late night breakfast S’mores combine the classic S’mores ingredients (Hershey’s Chocolate bars, Jet-Puffed Marshmallows, and Honey Maid Graham Crackers) with sliced bananas, granola, and pecans. No campfire? No problem. These S’mores are designed to be made in the microwave and will be ready to eat in just seconds!
Classic S’mores Ingredients
I picked up my S’mores ingredients in a seasonal S’mores display at my grocery store. Location may vary at your store, but just look for the large display of Hershey’s Chocolate bars, Jet-Puffed Marshmallows, and Honey Maid Graham Crackers.
I don’t stay up late as much as I used to, so when I do, it’s really an occasion- especially when I’m staying up late to watch a movie! These S’mores make the perfect snack for a late night movie.
I love how the texture is made more complex with the addition of nuts and granola. Plus, the banana adds a complementary fruitiness that balances the sweetness of the marshmallow, chocolate, and graham cracker.
Late Night Breakfast S'mores with Granola, Bananas, and Pecans Recipe
Ingredients
- Graham crackers
- Milk chocolate bars
- Large marshmallows
- Granola
- Pecan halves and pieces
- Ripe bananas sliced in strips
Instructions
-
Place a graham cracker square on a microwaveable plate. Break a milk chocolate bar into a single piece that will fit on the square. Lay a few pecan halves and pieces on the chocolate, then sprinkle with a little granola. Place two marshmallows on top, but don't add the banana or the top graham cracker yet.
-
Put the plate in the microwave. Microwave for 10 seconds, or until marshmallows puff up. Remove plate from the microwave. Sprinkle a little more granola on the melted marshmallows, then add a slice of banana, then top with another graham cracker square. Enjoy!

I really wish I ate bananas because between the bananas and the nuts, these are basically health food! Right!?
Katie
Absolutely. 😉
If you don’t eat bananas, try another fruit, like sliced strawberries! Yum!
