Tropical Fruit Salad with Honey Coconut Water Dressing

Do you ever get so busy that you forget to drink?  I do.  Between work, family, and hobbies, it seems there’s always another activity on the schedule.  I have to remind myself to take a moment or two just to refresh!

Sometimes, the best refreshment is something simple.  Just sitting down with a cool beverage or a light snack (or both) can be all it takes to make you feel energized.

There are a lot of great beverages to choose from when you’re looking to hydrate.  I went to Walmart the other day to try out Snapple Straight Up Tea, Vita Coco Pure, Brasilia Blueberry Bai5, and Neuro Bliss.  Before you head to Walmart, don’t forget to grab this coupon and this rebate!

Most of these drinks can be found in cold cases near the checkout lanes.  Different cold cases have different assortments of drinks, so be sure to look around to find the one you want.

In addition, more varieties can be found in the aisles containing sodas, bottled tea, and water.

Personally, I’m a coconut water fanatic, so Vita Coco Pure was a must for me.  I’ve combined it with some of my favorite fruits and a little dab of honey to make a tropical fruit salad that will perk you right up with its cheerful color and cool sweetness.  I also loved the Snapple Straight Up Tea Sorta Sweet, which was sweetened with real sugar, but not quite as sweet as their regular sweet tea.  Very refreshing!

Tropical Fruit Salad with Honey Coconut Water Dressing

This refreshing fruit salad is made with dragonfruit, honeydew, carambola, and pineapple, and tossed in coconut water and honey. So cool and sweet!

Ingredients

  • 1/2 cup coconut water
  • 2 teaspoons honey
  • 1 cup pineapple chunks
  • 1 cup dragonfruit chunks you will need one dragonfruit
  • 1 cup honeydew chunks
  • 1 carambola sliced across to form star shapes star fruit
  • Fresh mint optional garnish

Instructions

  1. Combine the honey and coconut water and whisk until honey dissolves.
  2. Combine the fruit in a large bowl. Pour the coconut water and honey dressing over the fruit and toss lightly. Garnish with mint sprig and serve immediately.

    I’ve never tried dragon fruit, or star fruit and it’s kind of hard to find in my remote region of Texas :-), but once I do I want to give this a go. Sounds so refreshing and sweet!

      I can often find it in Hispanic grocery stores, even when it is nowhere to be seen in other grocery stores. 🙂 I’ll check out your link party!
