Loaded Chili Cheese Potato Parfait

Theme parks excel at the fine art of fun food.  Churros, giant pretzels, frozen lemonades, and other novel items abound.  Once, many years ago, I ran across a snack food stand that sold something called a “potato parfait.”

My curiosity was piqued, because parfait, in its original French form, refers to a frozen custard dessert, and the American parfait (invented some time around the end of the 19th century) refers to a layered dessert of ice cream and fruit.  What could that have to do with potatoes?

It turned out that some genius converted the cold, sweet, layered parfait into a hot and savory meal by layering mashed potatoes, cheese sauce, and hot chili in a tall parfait glass.  I have a hunch that this creation was inspired by the famous Pulled Pork Parfait, a concession stand invention from the Midwest.

In honor of savory parfaits everywhere, I’ll demonstrate how to make a dinner-worthy parfait at home with the help of Idaho Spuds VeggieMash.  VeggieMash is made using real vegetables, so you can get your family to eat their greens without even knowing it.

Loaded Chili Cheese Potato Parfait

Ingredients

  • 3 cups mashed potatoes Idaho Spuds VeggieMash Mashed Potatoes with Cauliflower, Butter & Herbs
  • 2 cups chili
  • 1/4 cup cheese sauce
  • 4 teaspoons bacon bits

Instructions

  1. Layer the mashed potatoes and chili evenly in four parfait glasses.

  2. Top each parfait with 1 tablespoon of cheese sauce and 1 teaspoon of bacon bits.  Serve immediately.

    My 8 yr old loves potatoes and loves to add all kinds of things to hers. I can totally seeing her love making a potato parfait with all the fixins.
