Loaded Chili Cheese Potato Parfait
Theme parks excel at the fine art of fun food. Churros, giant pretzels, frozen lemonades, and other novel items abound. Once, many years ago, I ran across a snack food stand that sold something called a “potato parfait.”
My curiosity was piqued, because parfait, in its original French form, refers to a frozen custard dessert, and the American parfait (invented some time around the end of the 19th century) refers to a layered dessert of ice cream and fruit. What could that have to do with potatoes?
It turned out that some genius converted the cold, sweet, layered parfait into a hot and savory meal by layering mashed potatoes, cheese sauce, and hot chili in a tall parfait glass. I have a hunch that this creation was inspired by the famous Pulled Pork Parfait, a concession stand invention from the Midwest.

Loaded Chili Cheese Potato Parfait

Ingredients
- 3 cups mashed potatoes Idaho Spuds VeggieMash Mashed Potatoes with Cauliflower, Butter & Herbs
- 2 cups chili
- 1/4 cup cheese sauce
- 4 teaspoons bacon bits
Instructions

Layer the mashed potatoes and chili evenly in four parfait glasses.

Top each parfait with 1 tablespoon of cheese sauce and 1 teaspoon of bacon bits. Serve immediately.
